Ingredients
Milk Base:
100ml Coconut Milk
100ml Fresh Milk
40g Caster Sugar
4g Agar-Agar Powder
Chrysanthemum Tea Layer:
Equipment Needed:
Mini muffin pan
Hand whisk
Medium size pot
Strainer
Instructions:
1๏ธโฃ Combine coconut milk, fresh milk, sugar, and agar agar powder in a pot. Heat and stir until it boils. Simmer for 2 minutes, then let it cool slightly. Pour into a mini muffin pan and refrigerate for 2 hours.
2๏ธโฃ Boil chrysanthemum flowers, goji berries, and red dates in 800ml water for 15 minutes. Strain the chrysanthemum tea and set aside 550ml. Add rock sugar and agar agar powder to the tea, stir until it dissolves. Cool slightly.
3๏ธโฃ Retrieve the milk jelly from the fridge. Fill the remaining space in the mould with the chrysanthemum tea.
4๏ธโฃ Chill the jelly in the refrigerator for 2 hours before serving.
